Brie-Grilled with wine and thyme =================================== Ingredients: Small brie round (about 4-5 inches), 1-2 tbsp white wine, a few sprigs of fresh thyme, bagette, olive oil Brie Instructions: 1) Cut top rind off brie cheese and put in small circle cast iron with rind down (maybe even push to indent center lightly to hold wine) 2) Add some white wine on top (1-2 tbsp) 3) Pull leaves off fresh thyme and put on top (1 tsp) 4) Grill 6-8 minutes at 400 degrees (medium heat) until bubbly and melted 5) Sprinkle with salt and pepper on top 6) Let cool enough to eat (best eaten by scooping toasted bagettes into it - below) Bagette instructions: 1) Slice bagette into 1/2 slices + brush with olive oil 2) Grill 2 min per side to toast over indirect heat (upper warming rack on grill works great) ** This can be done while brie is melting **
